One of the things that surprises and delights many people when they first arrive in China is that the food is NOTHING like the "Chinese food" you find in the US. At Chinacopia, when we refer to "Chinese food" we are referring to Chinese food as it is found in China, not what you might find at your local "Peking Buffet." Chinese cuisine in China is vast and diverse, varying from place to place; not at all the homogeneous collection of 'Orange chicken' and 'Lo mein' you find in the US.
